Baked Artichoke Squares
2 – 6 oz. jars marinated artichokes
1 onion, chopped
1 clove garlic, minced
4 eggs
1/2 to 1 cup breadcrumbs
Dash of Tabasco
1/2 tsp. oregano
Salt and pepper (to taste)
2 cups Cheddar cheese, shredded
Drain juice from 1 jar of artichokes into a skillet. Sauté onion and garlic in artichoke juice.
Drain other jar (discard juice) and chop up all artichokes adding them to the onion and garlic mixture. Let simmer.
In a bowl, beat eggs and then add the breadcrumbs, Tabasco, oregano, salt, pepper, cheese, and artichoke mixture. Mix well and put into a 9 x 9-inch non-greased pan and bake for 30 minutes at 350º (but depending on your oven, they may need to cook longer). It should be light brown on top and firm in the middle.
Let cool, then cut into squares.
This reheats well if you want to make it in advance.
